Greek Yogurt Biscuits Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup plain Greek yogurt
  • 2 to 3 tablespoons whole milk

Method
 

  1. Heat oven to 425°F and line a baking sheet with parchment. Whisk flour, baking powder, baking soda, and salt. Cut in cold butter until pea-sized bits remain.
  2. Stir in yogurt and 2 tablespoons milk until a shaggy dough forms. Add more milk 1 teaspoon at a time if too dry.
  3. Pat dough on a floured surface to 3/4 inch thick. Fold in thirds, pat out, and repeat once. Cut with a 2.5-inch cutter without twisting.
  4. Place biscuits close together on the sheet, brush tops with milk or butter, and bake 12 to 15 minutes until deep golden.
  5. Brush with melted butter as soon as they come out and serve warm.

Notes

Use cold ingredients straight from the fridge for the flakiest texture. If the kitchen is warm, pop the butter and yogurt in the freezer for 10 minutes before starting.
