Greek Yogurt Alfredo Sauce Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup plain full-fat Greek yogurt
  • ¾ cup finely grated Parmesan cheese
  • ½ tsp fine sea salt, plus more to taste
  • 2 tbsp reserved hot pasta water (optional)
  • Freshly ground black pepper

Method
 

  1. Melt the butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  2. Remove the skillet from the heat, add the Greek yogurt, and whisk until completely smooth. Return to low heat and warm gently for 2 minutes, without boiling.
  3. Take the pan off the heat again. Fold in the Parmesan in three additions, stirring until melted and creamy. Thin with pasta water as needed, then season with salt.
  4. Toss the drained pasta directly into the sauce until evenly coated. Serve immediately with black pepper and extra Parmesan.

Notes

This sauce thickens quickly once plated, so toss and serve right away. If it gets too thick, stir in a few extra spoons of warm pasta water.
