Greek Steak Marinade Recipe

Ingredients
  

  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp red wine vinegar
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 1/2 pounds steak

Method
 

  1. In a bowl, whisk olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper until combined.
  2. Place steak in a zip-top bag or dish, pour marinade over, and seal. Marinate at room temperature 20-30 minutes or refrigerate up to 4 hours.
  3. Preheat a grill or cast iron skillet over high heat. Remove steak from marinade, letting excess drip off. Cook 3-4 minutes per side for medium-rare (130°F), or until desired doneness.
  4. Rest steak 5 minutes, then slice against the grain and serve.

Notes

Dry the steak well with paper towels before cooking for the best crust. This marinade also works nicely on pork chops and lamb.
