Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 lemon, halved, for grilling

Method
 

  1. Whisk the olive oil, lemon juice, garlic, oregano, salt, and pepper in a shallow dish. Add the chicken, coat well, cover, and refrigerate for at least 30 minutes and up to 4 hours.
  2. Heat a grill to medium-high (400–450°F). Remove the chicken from the marinade, letting excess drip off, and grill for 6 to 7 minutes per side until the internal temperature reaches 165°F.
  3. Transfer the chicken to a cutting board, tent with foil, and rest for 5 minutes. Slice against the grain.
  4. Grill the lemon halves cut side down for 2 to 3 minutes until caramelized, then squeeze over the sliced chicken and serve immediately.

Notes

The marinade time is not included in the prep or cook time, so plan for at least 30 minutes hands-off resting. An instant-read thermometer will help you pull the chicken the moment it hits 165°F for the juiciest result.
