Greek Chicken Breast Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 3 tbsp olive oil, divided
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp unsalted butter (optional)

Method
 

  1. Whisk 2 tbsp olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and marinate 10 minutes at room temperature.
  2. Heat remaining 1 tbsp oil in a large skillet over medium-high. Sear chicken about 5 minutes per side until golden and 165°F inside.
  3. Remove chicken and keep warm. Add broth to the skillet, scrape up browned bits, and reduce by half, 2 to 3 minutes. Off heat, stir in butter until glossy.
  4. Slice chicken against the grain, spoon sauce over the top, and serve with extra lemon.

Notes

For the most even cooking, pound thick breasts to about 3/4 inch. If you have time, marinate in the refrigerator for up to 2 hours for deeper flavor. Let the chicken rest a couple of minutes under foil before slicing so the juices settle.
