- Whisk 2 tbsp olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and marinate 10 minutes at room temperature.
- Heat remaining 1 tbsp oil in a large skillet over medium-high. Sear chicken about 5 minutes per side until golden and 165°F inside.
- Remove chicken and keep warm. Add broth to the skillet, scrape up browned bits, and reduce by half, 2 to 3 minutes. Off heat, stir in butter until glossy.
- Slice chicken against the grain, spoon sauce over the top, and serve with extra lemon.
Notes
For the most even cooking, pound thick breasts to about 3/4 inch. If you have time, marinate in the refrigerator for up to 2 hours for deeper flavor. Let the chicken rest a couple of minutes under foil before slicing so the juices settle.
