- Melt the butter in a skillet over medium heat, then cook the shallot until soft, about 2 minutes.

Notes
Gorgonzola dolce gives a milder, creamier result; piccante brings a sharper bite. The sauce will continue to thicken as it cools, so serve it immediately for the best texture.
