Ingredients
  

  • 1 cup light corn syrup
  • 1 cup packed light brown sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt
  • 2 cups pecan halves or roughly chopped pecans, plus a small handful for topping
  • 1 box (15.25 oz) yellow cake mix
  • 3/4 cup cold unsalted butter, sliced into thin pats

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish. Whisk corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until smooth. Fold in the 2 cups of pecans, then pour into the dish and spread evenly.
  2. Sprinkle the dry cake mix evenly over the pecan mixture, breaking up any clumps so it covers the top completely.
  3. Distribute the cold butter pats over the cake mix, then scatter the reserved pecans on top.
  4. Bake for 45 to 50 minutes until deeply golden and bubbling at the edges. Let rest 15 minutes, then slice and serve warm.

Notes

Letting the baked cake sit the full 15 minutes is important for clean slices. If you need it to hold its shape for a party, cool it completely and reheat portions as needed.
