Gooey Pecan Pie Cheesecake Bars Recipe

Ingredients
  

  • 1¼ cups all-purpose flour
  • ⅓ cup packed brown sugar
  • ½ cup cold salted butter, cut into cubes
  • 8 oz cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • ½ cup brown sugar
  • ½ cup light corn syrup
  • 2 large eggs, beaten
  • 2 tbsp melted butter
  • 1½ cups pecan halves

Method
 

  1. Heat oven to 350°F (175°C). Line an 8x8 inch pan with parchment. Mix flour and ⅓ cup brown sugar, then cut in cold butter until crumbly. Press firmly into pan. Bake 15 minutes, then cool slightly.
  2. Beat cream cheese, granulated sugar, and vanilla until smooth. Beat in 1 egg just until combined. Spread over crust.
  3. Whisk ½ cup brown sugar, corn syrup, 2 beaten eggs, melted butter, and salt until smooth. Fold in pecans. Spoon over cheesecake layer.
  4. Bake at 350°F for 30 to 35 minutes, until edges are golden and center jiggles slightly in a tight circle.
  5. Cool on a rack 1 hour, then chill at least 3 hours. Lift out and slice into squares.

Notes

The bars need a full chill to set properly; plan on making them a day ahead. If your pecans are unsalted, add a pinch of fine sea salt to the pecan topping to balance the sweetness.
