Method
- Stir 1 tbsp sugar and yeast into warm milk, let proof 5 minutes. Mix in remaining sugar, egg, yolk, melted butter, 3 cups flour, and 1 tsp salt until a shaggy dough forms.
- Knead on a floured surface 8 minutes, adding remaining flour as needed. Place in greased bowl, cover, and let rise 1 hour until doubled.
- Beat softened butter, brown sugar, cinnamon, and a pinch of salt into a smooth paste for the filling.
- Roll dough into a 16x12 inch rectangle. Spread filling, roll up tightly, pinch seam, cut into 12 pieces. Arrange in greased 9x13 inch pan.
- Pour warm heavy cream over rolls. Cover and let rise 30 to 45 minutes. Bake at 350°F for 25 to 30 minutes until golden and bubbling.
- Beat cream cheese, 1/4 cup butter, powdered sugar, vanilla, and salt until fluffy. Frost hot rolls and serve immediately.
Notes
The total time does not include about 1.5 hours of rising. For overnight rolls, refrigerate the shaped rolls and pour cream and let them rise the next morning. If the rolls brown too fast, tent with foil after 20 minutes of baking.
