Method
- Preheat oven to 350°F (175°C) and bring a kettle of water to a boil.
- In a medium bowl, whisk the melted butter and sugar until glossy, then whisk in eggs and vanilla.
- In a small bowl, stir together the flour, cocoa powder, and salt.
- Fold the dry mixture into the wet just until combined.
- Pour batter into a greased 8x8-inch baking dish; place dish in a larger roasting pan and pour boiling water into the outer pan until it comes halfway up the sides of the dish.
- Bake for 35 to 40 minutes, until the top is set and crackly and the center jiggles slightly.
- Let cool 5 minutes, dust with powdered sugar, and spoon into bowls while warm.
Notes
This pudding is best eaten warm, just a few minutes out of the oven. As it cools, the center will firm up into a fudgy, dense brownie-like texture. Leftovers reheat well in the microwave.
