Gooey Brownie Pudding Dessert Recipe

Ingredients
  

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour, spooned and leveled
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp fine sea salt
  • Powdered sugar, for dusting
  • Boiling water, for the water bath

Method
 

  1. Preheat oven to 350°F (175°C) and bring a kettle of water to a boil.
  2. In a medium bowl, whisk the melted butter and sugar until glossy, then whisk in eggs and vanilla.
  3. In a small bowl, stir together the flour, cocoa powder, and salt.
  4. Fold the dry mixture into the wet just until combined.
  5. Pour batter into a greased 8x8-inch baking dish; place dish in a larger roasting pan and pour boiling water into the outer pan until it comes halfway up the sides of the dish.
  6. Bake for 35 to 40 minutes, until the top is set and crackly and the center jiggles slightly.
  7. Let cool 5 minutes, dust with powdered sugar, and spoon into bowls while warm.

Notes

This pudding is best eaten warm, just a few minutes out of the oven. As it cools, the center will firm up into a fudgy, dense brownie-like texture. Leftovers reheat well in the microwave.
