- Preheat oven to 375°F (190°C). Toss sliced peaches with 1/2 cup sugar, lemon juice, vanilla, cinnamon, and nutmeg in a bowl. Let sit 10 minutes.
- In a separate bowl, whisk flour, 1/3 cup sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk just until dough comes together.
- Melt 2 tbsp butter in a 10-inch cast iron skillet over medium heat. Pour in peach mixture and all the juices. Drop spoonfuls of dough over the top. Brush with melted butter and sprinkle with coarse sugar if desired.
- Bake until topping is golden brown and filling is bubbling, 30 to 35 minutes. Let cool 10 minutes before serving.
Notes
If using frozen peaches, no need to thaw; just add about 5 minutes to the bake time. The biscuit topping is best the day it’s made, but leftovers keep in the fridge for a few days and can be re-crisped in the oven.
