Ingredients

  • 1 lb ground chicken
  • 3 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp vegetable oil
  • Sliced cucumber, kimchi, fried eggs, sesame seeds, green onions (optional toppings)

Method

  1. Whisk gochujang, soy sauce, honey, sesame oil, rice vinegar, garlic, and ginger in a small bowl.
  2. Heat vegetable oil in a large skillet over high heat. Add ground chicken, break it up, and cook until browned and no longer pink, about 5 minutes.
  3. Pour the sauce over the chicken, reduce heat to medium, and simmer 2 to 3 minutes until thickened and glossy.
  4. Spoon the chicken over rice and top with cucumber, kimchi, a fried egg, sesame seeds, and green onions. Serve immediately.

Notes

Timing assumes you have steamed rice ready or started ahead. Make the sauce and prep toppings while the rice cooks so everything meets the table hot.
