Ingredients
  

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Whisk all ingredients together in a bowl until the sugar and salt dissolve.
  2. Place 1 1/2 to 2 pounds of steak in a zip-top bag. Pour the marinade over the meat, seal it, and turn to coat. Refrigerate for at least 1 hour or up to 8 hours.

Notes

Discard any marinade that touched raw beef. If you want to baste with it, boil first. For the best crust, let the steak sit at room temperature for 30 minutes and pat it dry before cooking.
