Method
- Blend the milk, eggs, and salt, then add the flour blend. Blend until smooth and let the batter rest.
- Preheat the oven to 450°F (230°C). Divide the fat into a 12-hole metal muffin tin and heat in the oven until shimmering and nearly smoking, 8 to 10 minutes.
- Quickly pour the batter into the hot fat, filling each cup halfway.
- Bake without opening the door for 20 to 22 minutes, until deeply golden and puffed.
- Remove from the tin and serve immediately with roast beef and gravy.
Notes
For the tallest rise, make sure the milk and eggs are at room temperature, and let the blended batter rest for at least 30 minutes before baking. The puddings are at their crispiest straight from the oven.
