Method
- Combine coffee and liqueur (if using) in a shallow bowl. Set aside.
- Beat egg yolks and sugar until thick and pale, about 3 minutes. Beat in vanilla, then mascarpone until smooth. Whip cream to soft peaks and fold into mascarpone mixture.
- Quickly dip both sides of ladyfingers into coffee soak. Layer half in an 8x8-inch dish, spread half the cream, then repeat. Cover and refrigerate at least 4 hours.
- Dust top with cocoa powder, slice, and serve cold.
Notes
Use crisp gluten-free ladyfingers like Schär Savoiardi for the right texture. If you can’t find them, strips of gluten-free vanilla cake are a good substitute. This dessert needs a minimum 4-hour chill, but overnight gives the best flavor and cleanest slices.
