Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 cup sour cream
  • ½ cup whole milk
  • 2 tbsp gluten-free all-purpose flour or cornstarch
  • 1 cup beef broth
  • 2 tsp Worcestershire sauce (gluten-free)
  • 1 cup frozen mixed vegetables
  • 2 cups shredded sharp cheddar cheese
  • 1 (32 oz) bag frozen tater tots

Method
 

  1. Brown ground beef and onion in a skillet over medium-high heat until no pink remains, about 6 to 7 minutes. Drain excess fat, then stir in garlic for 30 seconds.
  2. Whisk sour cream, milk, and flour together. Add beef broth, Worcestershire, sour cream mixture, and frozen vegetables to the skillet. Simmer until thickened, 3 to 4 minutes. Season with smoked paprika, salt, and pepper.
  3. Preheat oven to 400°F (200°C). Spread beef mixture in a 9×13-inch dish, top with a single layer of frozen tater tots, and scatter shredded cheddar over everything.
  4. Bake uncovered until tots are golden and edges bubble, 25 to 30 minutes. Broil 1 to 2 minutes for an extra-crispy top if desired. Let rest 5 minutes.
  5. Scoop through all layers and serve hot.

Notes

This casserole is naturally gluten-free as long as your broth and Worcestershire sauce are labeled gluten-free. Most plain tater tots are safe, but always check the package. If you want a richer sauce, stir 4 oz of softened cream cheese into the beef mixture before adding the broth.
