- Beat butter and sugar on medium speed until pale and fluffy, about 3 minutes.
- Mix in egg and vanilla until smooth, about 1 minute.
- Whisk together flour, cornstarch, baking powder, and salt, then stir into the butter mixture just until a dough forms.
- Divide dough in half, roll each between parchment paper to ¼ inch thick, and cut into shapes.
- Transfer cutouts to a parchment-lined baking sheet and freeze 15 minutes while preheating oven to 350°F (175°C).
- Bake 10 to 12 minutes until edges are just barely golden; cool completely on the sheet, then decorate as desired.
Notes
Cook time is for one sheet of cookies; if you’re baking multiple sheets, add about 12 minutes per additional sheet. For deep, even golden edges, rotate the pan halfway through baking. The dough can also be chilled in the fridge after cutting if you prefer, just give it 30 minutes instead of 15.
