Ingredients

  • 2 cups gluten free all purpose flour (with xanthan gum)
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • 1 tbsp honey
  • 1 cup cold buttermilk
  • 1 large egg
  • 2 tbsp unsalted butter, melted and cooled slightly

Method

  1. Preheat oven to 400°F (200°C). In a large bowl, whisk together flour, baking soda, and salt.
  2. In a separate bowl, whisk buttermilk, egg, honey, and melted butter until smooth. Pour into dry ingredients and stir until just combined.
  3. Turn the sticky dough onto a lightly floured surface and shape into a 6-inch round. Place on a parchment-lined baking sheet and cut a deep cross into the top.
  4. Bake 30 to 35 minutes, until deep golden and the bottom sounds hollow when tapped (internal temp 200°F to 205°F).
  5. Cool on a wire rack at least 15 minutes, then slice thickly and serve warm.

Notes

The loaf slices best after it cools a bit. If you want a softer crust, wrap the warm bread in a clean kitchen towel right after it comes out of the oven.
