Ingredients
Method
- Beat the butter until smooth, then add 1/2 cup powdered sugar and beat until pale and fluffy. Mix in the vanilla.
- Add the flour and salt, mix on low until a crumbly dough forms. Stir in the pecans just until combined.
- Roll tablespoon-sized balls of dough, place on a parchment-lined baking sheet 1 inch apart, and bake at 350°F for 12 minutes.
- Let the cookies cool on the pan for 5 minutes, then roll in powdered sugar while warm. Cool completely and roll a second time.
Notes
If the dough feels sticky when shaping, chill it for 20 minutes before rolling. The second sugar coating is what gives these cookies their snowy look, so do not skip it. For the most tender texture, bake just until the bottoms are golden and the tops are still pale.
