Method
- Preheat oven to 375°F. Combine all ingredients in a large bowl, mixing with your hands until a sticky dough forms.
- Scoop tablespoon-sized portions and roll into 1-inch balls. Place on a parchment-lined baking sheet, spaced an inch apart.
- Bake for 20 to 25 minutes, until golden on the bottom and bubbly on top.
- Transfer to a platter and serve hot with your favorite dipping sauce.
Notes
The dough will be tacky; wetting your hands makes rolling much easier. For the cleanest cuts, use a sharp cheddar you grate from a block. Unbaked balls freeze well, just add a few extra minutes to the bake time straight from frozen.
