Gluten-Free Salmon Patties Recipe

Ingredients
  

  • 1 (14.75 oz) can pink or red salmon, drained and flaked
  • 1 large egg
  • ⅓ cup gluten-free panko breadcrumbs
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons olive oil

Method
 

  1. In a large bowl, whisk together egg, Dijon, lemon zest, onion powder, garlic powder, salt, pepper, and 2 tbsp chopped dill. Add drained, flaked salmon and fold gently. Sprinkle in gluten-free panko and fold until mixture holds together when squeezed.
  2. Divide mixture into 4 portions and shape into patties about ½ inch thick.
  3. Heat 2 tbsp olive oil in a large nonstick skillet over medium heat. Add patties and cook without moving for 4 to 5 minutes, until golden. Flip and cook another 4 minutes, until crisp.
  4. While patties cook, stir together yogurt, 1 tbsp dill, a pinch of salt, and lemon juice. Serve patties hot with sauce and lemon wedges.

Notes

The patties can be prepped a few hours ahead and refrigerated uncooked. Let them come to room temperature for 5 minutes before frying. If using fresh salmon, chill the shaped patties for 20 minutes to help them set.
