- Preheat oven to 375°F (190°C) and line a 15x10-inch jelly roll pan with parchment. Whisk flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt together.
- Beat eggs on high until thick and pale, about 3 minutes. Add granulated sugar gradually, beat 2 minutes more. Mix in pumpkin puree and 1 tsp vanilla on low. Fold in dry ingredients until just combined.
- Pour batter into pan, spread evenly, and bake 13 to 15 minutes until the top springs back.
- Dust a clean kitchen towel heavily with powdered sugar. Invert the hot cake onto the towel, peel off parchment, and roll the cake and towel together from a short side. Cool completely on a rack.
- Beat cream cheese and butter until smooth. Sift in powdered sugar and add 1/2 tsp vanilla, then beat on high until fluffy, about 1 minute.
- Unroll the cooled cake. Spread filling evenly to within 1/2 inch of the edges. Re-roll without the towel, wrap tightly in plastic, and refrigerate at least 1 hour.
- Unwrap, trim ends, slice with a serrated knife, and dust with powdered sugar before serving.
Notes
Cooling the rolled cake completely before filling is important; warm cake melts the cream cheese. A full 1-hour chill after assembling makes slicing cleaner. If you freeze the roll, thaw it slowly in the fridge so the filling does not sweat.
