Gluten Free Pumpkin Pie Recipe

Ingredients
  

  • 1 1/2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 tbsp granulated sugar
  • 1/2 tsp fine sea salt
  • 1/2 cup cold unsalted butter, cubed
  • 4 to 6 tbsp ice water
  • 1 can (15 oz) pumpkin puree
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp fine sea salt
  • 1 can (12 oz) evaporated milk
  • 1 tsp vanilla extract

Method
 

  1. Pulse flour, 1 tbsp sugar, and 1/2 tsp salt in a food processor. Add cold butter and pulse to coarse crumbs. With motor running, add 4 tbsp ice water; add more until dough clumps. Press into a disc, wrap, and chill 30 minutes.
  2. Preheat oven to 425°F (220°C). Roll dough between parchment to a 12-inch circle, fit into a 9-inch pie pan, crimp edges, and prick bottom. Line with parchment and weights, bake 15 minutes, remove weights, bake 5 minutes more.
  3. In a saucepan over medium heat, whisk pumpkin, brown sugar, cinnamon, ginger, cloves, and salt until steaming, about 5 minutes. Remove from heat, stir in evaporated milk and vanilla. Whisk eggs in a small bowl, then slowly whisk into warm mixture.
  4. Place crust on a baking sheet, pour in filling. Lower oven to 350°F (175°C) and bake 40 to 50 minutes, until edges are set and center jiggles slightly. Cool on a rack at least 2 hours.
  5. Cool completely, then slice and serve. Refrigerate any leftovers.

Notes

If your gluten-free flour blend does not contain xanthan gum, add 1/2 tsp to the dry ingredients so the dough holds together. The pie tastes even better the next day, so it is an ideal make-ahead dessert.
