Method
- Heat oven to 425°F (220°C) and line a baking sheet with parchment. Whisk flour, baking powder, salt, and sugar in a large bowl. Stir in yogurt and melted butter until a shaggy dough forms, then gently knead until smooth.
- Divide dough into 4 pieces, roll each into a 1/2-inch rope, and cut into 1-inch bites. Place on the baking sheet with space between them.
- Dissolve baking soda in hot water and brush the tops of each bite generously. Sprinkle with coarse salt right away.
- Bake for 10 to 12 minutes, until deeply golden and puffed. Let cool on the sheet for 5 minutes, then brush with extra butter if desired. Serve warm.
Notes
These are best fresh from the oven, but they keep well and re-crisp nicely. If you chill the dough ahead of time, let it sit at room temperature for 15 minutes before shaping so it’s easier to roll.
