Gluten Free Pound Cake Recipe

Ingredients
  

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup plus 2 tablespoons granulated sugar (225g)
  • 4 large eggs, room temperature
  • 3 oz cream cheese, softened
  • 2 teaspoons vanilla extract
  • 1 ½ cups (210g) gluten-free all-purpose flour with xanthan gum
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt

Method
 

  1. Preheat oven to 325°F (163°C). Grease a 9x5-inch loaf pan and line the bottom with parchment. Beat butter and sugar on medium speed until light and fluffy, about 3 minutes.
  2. Add eggs one at a time, beating well after each. Beat in cream cheese and vanilla until smooth, about 2 minutes.
  3. In a small bowl, whisk together flour, baking powder, and salt. Fold into the wet mixture by hand in two additions just until no streaks remain.
  4. Scrape batter into the prepared pan, smooth the top, and bake for 55 to 65 minutes until a toothpick inserted in the center comes out with a few moist crumbs. Cool in the pan on a wire rack for 10 minutes, then lift out to cool completely.
  5. Slice with a serrated knife and serve as is or with fresh berries and powdered sugar.

Notes

Cool the cake completely before slicing, about 2 hours. Store leftovers at room temperature for up to 3 days or freeze for longer keeping.
