Ingredients

  • 6 cups sliced ripe peaches (about 5-6 medium)
  • 2 tbsp cornstarch
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 cup gluten-free rolled oats
  • 1/2 cup almond flour
  • 1/2 cup packed brown sugar
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter, cubed

Method

  1. Heat oven to 375°F (190°C). Toss peaches with cornstarch, sugar, lemon juice, vanilla, and cinnamon in a large bowl.
  2. Stir oats, almond flour, brown sugar, and salt. Cut in cold butter until mixture looks like coarse crumbs with some pea-sized lumps.
  3. Transfer peach mixture and any juices to an 8×8-inch baking dish. Sprinkle crumble evenly on top, pressing some down and leaving some peaks.
  4. Bake 35-40 minutes until edges bubble thickly and topping is deep golden. Cool 10 minutes, then scoop into bowls and serve warm.

Notes

Ripe but still-firm peaches give the best texture. If yours are very soft, use them the day you buy them. A scoop of ice cream or a drizzle of cold cream is never a bad idea.
