Method
- Crush the gluten-free sandwich cookies in a food processor until fine crumbs form, about 1 minute.
- Mix the crumbs with the softened cream cheese until a uniform dough comes together.
- Roll the dough into 1-inch balls (about 1 tablespoon each), place on a parchment-lined sheet, and chill for 20 minutes.
- Melt the semi-sweet chocolate, dip each chilled ball using a fork, return to the parchment, and chill 15 minutes until set.
- If using, melt the white chocolate and drizzle over the set balls. Let them firm up, then serve.
Notes
Chill the balls for 20 minutes before dipping and let the coated balls set for about 15 minutes. These chilling times are not counted in the prep time, so plan for about an hour from start to finish.
