- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
- Beat in eggs and vanilla, then add peanut butter and mix until smooth, scraping down the bowl as needed.
- Add oats, baking soda, and salt. Mix on low just until combined, without overmixing.
- Stir in chocolate chips and M&M’s with a spatula until evenly distributed.
- Scoop dough by 2-tablespoon rounds onto prepared sheets, spacing 2 inches apart. Bake for 10 to 12 minutes, until edges are golden and centers look underdone. Cool on sheets for 5 minutes, then transfer to a wire rack.
Notes
For the best texture, use processed creamy peanut butter (like Jif or Skippy). Natural peanut butter can work but the dough may be slightly more fragile; stir it well before measuring. Always check labels on oats and candies to ensure they meet your gluten-free needs.
