Ingredients
  

  • 1 lb ground beef (85% lean)
  • 1/2 lb ground pork
  • 1/3 cup almond flour
  • 1 large egg
  • 1/2 cup finely grated Parmesan cheese
  • 1 small yellow onion, grated with its juice
  • 3 garlic cloves, minced
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 2 tbsp chopped fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C). In a large bowl, whisk together almond flour, egg, grated onion, garlic, Parmesan, salt, pepper, oregano, and parsley until it forms a wet paste.
  2. Add beef and pork to the bowl. Gently fold with your hands or a spatula just until combined; stop the moment no streaks of meat remain.
  3. With oiled hands, roll the mixture into 20 equal balls (about 1 1/2 inches across) and place them on a parchment-lined baking sheet.
  4. Bake on the middle rack for 18-22 minutes, until an instant-read thermometer reads 160°F (71°C) or the centers show no pink. For extra color, broil for the last minute.
  5. Transfer the hot meatballs to a skillet of warm marinara sauce, toss to coat, and let them sit together for 1-2 minutes. Serve with fresh parsley.

Notes

If you use lean beef (90% or higher), stir in 1 tablespoon olive oil to the wet mixture. For dairy free, omit the Parmesan or swap in 1 tablespoon nutritional yeast. These freeze well raw or cooked.
