Method
- Preheat oven to 350°F (175°C). Line an 8×8‑inch pan with parchment. Stir flour, sugar, and salt, then cut in cold butter until crumbly. Press firmly into the pan.
- Parbake the crust for 15 minutes until edges turn pale golden.
- Whisk eggs, sugar, lemon zest, and lemon juice. Whisk in the 1/4 cup flour until smooth.
- Pour filling over the hot crust and bake 18 to 22 minutes, until the center barely jiggles.
- Cool completely, lift out, slice into 16 squares, and dust with powdered sugar just before serving.
Notes
The bars must cool fully before slicing, or the curd will be too soft to hold a clean cut. If you prefer a thicker crust, double the crust ingredients, press into a 9×9‑inch pan, and add a few minutes to the parbake time.
