Ingredients
  

  • 1 ½ lb fresh green beans, trimmed
  • 8 oz cremini mushrooms, thinly sliced
  • 3 tbsp unsalted butter
  • 3 tbsp gluten-free 1-to-1 flour blend
  • 1 ¼ cups whole milk
  • ½ cup gluten-free chicken or vegetable broth
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 1 large yellow onion, very thinly sliced
  • ⅓ cup gluten-free flour blend (for onions)
  • ½ tsp salt
  • Vegetable oil, for frying

Method
 

  1. Blanch green beans in salted boiling water for 4 minutes, then shock in ice water, drain, and pat dry. Preheat oven to 375°F.
  2. Melt butter over medium heat. Sauté mushrooms until browned, about 5 minutes. Stir in 3 tbsp gluten-free flour and cook 1 minute. Whisk in milk, broth, salt, pepper, and garlic powder. Simmer 4 minutes until thick.
  3. Toss sliced onion with ⅓ cup gluten-free flour and ½ tsp salt. Fry in 1 inch of hot oil in batches until golden and crisp, about 2 to 3 minutes. Drain on paper towels.
  4. Fold green beans into the sauce and transfer to an 8x8-inch dish. Top with crispy onions and bake 25 minutes until bubbly.
  5. Let the casserole rest a few minutes, then serve hot.

Notes

If you’re short on time, skip the homemade onions and top the casserole with 1 ½ cups of your favorite gluten-free crispy fried onions from a bag. The dish still tastes holiday-worthy and shaves off about 15 minutes.
