Gluten Free Granola Bars Recipe

Ingredients
  

  • 2 cups gluten-free old-fashioned rolled oats
  • 1/2 cup creamy almond butter
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine sea salt
  • 1/2 cup add-ins (mini chocolate chips, dried cranberries, chopped nuts, or a mix)

Method
 

  1. Line an 8x8-inch baking pan with parchment, leaving overhang on two sides. In a large bowl, stir together the oats and salt.
  2. In a small saucepan over medium heat, whisk together the almond butter, honey, coconut oil, and brown sugar. Cook, stirring, until smooth and the sugar dissolves, about 2 minutes. Remove from heat and stir in the vanilla.
  3. Pour the warm mixture over the oats. Add the add-ins and stir until every oat is coated. Transfer to the pan and press very firmly into an even layer.
  4. Refrigerate at least 2 hours until solid. Lift out the block, cut into 12 bars, and serve.

Notes

Chill for at least 2 hours before slicing. If the block is too firm to cut cleanly, let it sit at room temperature for 5 minutes. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
