- Whisk the flour, baking soda, salt, ginger, cinnamon, and cloves in a large bowl.
- Beat the butter and brown sugar in the same bowl with a hand mixer until fluffy, about 2 minutes.
- Beat in the molasses, egg, and vanilla until smooth, about 50 seconds.
- Stir in the dry ingredients to form a soft dough, about 1 minute, and let rest 2 minutes while the oven heats to 350°F.
- Roll the dough to ¼ inch thick on a lightly floured surface, cut into shapes, and place on parchment-lined sheets.
- Bake one sheet at a time for 8 minutes until edges are set, cool on the sheet 3 minutes, then transfer to a wire rack.
- Once cool, dust with powdered sugar and serve.
Notes
This dough rolls best right after mixing, no chilling needed. If you bake multiple sheets, the cookies on the second sheet may spread slightly more as the dough warms, so pop the cut shapes in the fridge for 5 minutes while the first sheet bakes.
