Gluten Free Gingerbread Cake Recipe

Ingredients
  

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 1/2 cup unsulphured molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups gluten free all-purpose flour with xanthan gum
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/2 cup buttermilk

Method
 

  1. Preheat oven to 350°F and grease an 8-inch square pan. Whisk melted butter, brown sugar, molasses, egg, and vanilla until smooth.
  2. Whisk together gluten free flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt in a separate bowl.
  3. Add wet mixture to dry and whisk just until combined. Stir in buttermilk, pour batter into pan, and bake 30 to 35 minutes until a toothpick inserted in the center comes out with moist crumbs.
  4. Cool in pan 10 minutes, then turn out onto a rack and cool completely. Dust with powdered sugar and slice into squares.

Notes

For clean slices, let the cake cool completely before cutting. A serrated knife works best. If the top browns too quickly, loosely tent a piece of foil over the pan after 20 minutes.
