Gluten Free Fried Rice Recipe

Ingredients
  

  • 2 cups cooked and cooled jasmine rice
  • 1 tbsp vegetable oil
  • 6 oz boneless, skinless chicken breast, diced
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 medium carrot, finely diced
  • ½ cup frozen peas, thawed
  • 2 large eggs, lightly beaten
  • 3 tbsp gluten-free tamari
  • 1 tsp toasted sesame oil
  • 2 scallions, thinly sliced

Method
 

  1. Heat oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 4 minutes, then set aside.
  2. Sauté garlic, ginger, carrot, and peas for 2 minutes until fragrant.
  3. Push vegetables aside, add rice in an even layer, and cook without stirring for 1 to 2 minutes until crispy. Toss with vegetables.
  4. Push mixture aside, scramble eggs in the empty space, then add chicken, tamari, and sesame oil. Toss everything together, finish with scallions, and serve.

Notes

Cold, day-old rice is key for the best texture and to avoid mush. Tamari can be adjusted to taste, start with 2 tbsp and add more if needed. For a vegetarian version, omit the chicken and use cubed firm tofu or extra vegetables.
