Method
- Whisk buttermilk, hot sauce, and 1 tsp salt in a bowl. Submerge chicken, cover, and refrigerate at least 4 hours.
- Whisk flour blend, cornstarch, baking powder, paprika, garlic powder, onion powder, cayenne, remaining 1 tsp salt, and black pepper in a shallow dish.
- Dredge chicken pieces in the flour mix, pressing firmly, and set on a wire rack for 10 minutes.
- Heat 2 inches of oil to 350°F in a heavy pot. Fry chicken in batches, turning once, 12-15 minutes until 165°F internal.
- Drain on a wire rack and keep warm in a 200°F oven if needed.
- Pile the chicken on a platter, sprinkle with flaky salt, and serve immediately.
Notes
The marinating time is not included in the prep and total. If you are short on time, even 2 hours in buttermilk will still season the meat, though 4 or more is best.
