- Preheat oven to 300°F (150°C). Place bread slices on a baking sheet and toast for 5 minutes until dry but not browned.
- In a shallow dish, whisk together 2 eggs, ½ cup milk, 1 tsp vanilla, ½ tsp cinnamon, 1 tbsp sugar, and a pinch of salt until smooth.
- Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Dip each slice into the custard for about 15 seconds per side, letting excess drip off. Cook until golden, 3-4 minutes per side.
- Serve immediately with maple syrup, berries, or a dusting of powdered sugar.
Notes
If cooking in batches, keep finished slices warm in a 200°F (95°C) oven on a wire rack so they stay crisp. For the crispiest result, use bread that’s slightly stale or toasted.
