Gluten Free French Toast Casserole Recipe

Ingredients
  

  • 8 cups cubed gluten-free bread (about 1 lb loaf)
  • 6 large eggs
  • 2 cups whole milk
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp fine sea salt
  • 2 tbsp unsalted butter, melted
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon (for topping)

Method
 

  1. In a large bowl, whisk together the eggs, milk, maple syrup, vanilla, 1 tsp cinnamon, nutmeg, and salt until smooth.
  2. Add the bread cubes and fold gently until coated. Let sit 10 minutes, stirring once.
  3. Transfer the mixture to a greased 9x13-inch baking dish, press into an even layer, and let sit 10 to 15 minutes.
  4. Mix the melted butter, brown sugar, and 1/2 tsp cinnamon; drizzle and scatter over the top.
  5. Bake at 350°F (175°C) for 35 to 40 minutes, until golden and set. Cool 5 minutes, slice, and serve.

Notes

This casserole holds up well if assembled the night before through step 3 — just refrigerate, then bring to room temp before adding the topping and baking. If your gluten-free bread is very soft, toasting the cubes first makes a big difference.
