Ingredients

  • 3 lbs yellow onions (about 4 large), thinly sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 2 tbsp gluten-free all-purpose flour blend
  • ½ cup dry sherry
  • 6 cups gluten-free beef broth
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • Freshly cracked black pepper
  • 8 slices gluten-free sandwich bread
  • 1½ cups shredded Gruyère cheese
  • Olive oil, for brushing the bread

Method

  1. Melt butter and oil in a large Dutch oven over medium heat. Add onions and salt, cook 10 minutes until soft. Reduce heat to medium‑low and cook, stirring often, until deeply golden and jammy, 45 to 55 minutes.
  2. Sprinkle flour over the onions, stir for 1 minute. Pour in the sherry and scrape up any browned bits. Add the warm broth, thyme, and bay leaf.
  3. Bring to a gentle simmer and cook, partially covered, 25 to 30 minutes. Remove thyme and bay leaf. Season with pepper.
  4. Brush bread slices with olive oil and toast under the broiler until golden on both sides, about 1 to 2 minutes per side.
  5. Ladle soup into 4 oven‑safe bowls, top each with a toast and about ⅓ cup Gruyère. Broil until the cheese is bubbly and browned, 2 to 3 minutes. Serve immediately.

Notes

Keep the soup and the cheese topper separate until the moment you are ready to broil, especially if you are making the soup ahead. Not all gluten‑free flour blends contain xanthan gum; if yours does not, add a pinch during step 2 to help the soup reach a light body that holds onto the spoon.
