- Whisk the flour, water, olive oil, and salt in a bowl until smooth, then let the batter rest for 10 minutes while you heat a large skillet over medium-high heat.
- Add a teaspoon of oil to the hot skillet. Pour in about 1/4 cup of batter and swirl to form a thin round. Cook for 2 minutes, flip, and cook 1 to 2 minutes more. Repeat with the remaining batter, adding oil as needed.
- Stack the warm flatbreads on a plate, brush with extra olive oil if you like, and sprinkle with flaky salt. Serve right away.
Notes
Letting the batter rest for 10 minutes before cooking makes a noticeable difference in the texture; it is not counted in the prep time. The flatbreads taste best eaten fresh from the skillet.
