Gluten Free English Muffin Recipe

Ingredients
  

  • 3 cups (420 g) gluten-free all-purpose flour blend with xanthan gum
  • 2 tsp instant yeast
  • 2 tbsp granulated sugar
  • 1 tsp fine sea salt
  • 1 cup (240 ml) whole milk, warmed to 110°F (43°C)
  • 3 tbsp (42 g) unsalted butter, melted and cooled
  • 1 large egg, at room temperature
  • 1 tsp apple cider vinegar
  • Yellow cornmeal, for dusting

Method
 

  1. Whisk flour blend, yeast, sugar, and salt in a large bowl. Make a well and add warm milk, melted butter, egg, and vinegar. Stir until a sticky dough forms, then cover and let rise until puffy, about 30 minutes.
  2. Dust a parchment-lined sheet and work surface with cornmeal. Pat dough into a 1-inch-thick rectangle, cut 8 rounds with a 3-inch cutter, and place them on the sheet. Dust tops with more cornmeal, cover, and rest 10 minutes.
  3. Heat a cast-iron skillet over medium-low heat. Cook muffins in batches until deep golden, about 5 minutes per side, lowering heat if needed. Cool on a rack.
  4. Split each muffin with a fork, pulling the halves apart to expose the craggy interior. Toast until golden and serve warm.

Notes

The dough needs a 30-minute rise before shaping; that time is not part of the prep or cook counts above. You can also shape the muffins the night before and do a slow rise in the fridge overnight.
