Ingredients

  • 2 cups gluten free all-purpose flour blend with xanthan gum
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • ½ teaspoon fine sea salt
  • ½ cup (1 stick) unsalted butter, cold and cubed
  • ¾ cup buttermilk

Method

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment. Whisk flour, baking powder, sugar, and salt in a large bowl. Cut in cold butter until pea-sized bits remain.
  2. Pour in buttermilk and stir with a fork just until a shaggy, sticky dough forms.
  3. Drop ¼-cup mounds onto the prepared sheet, spacing them 2 inches apart. Bake 12 to 15 minutes until golden and set.
  4. Brush hot biscuits with melted butter and serve warm.

Notes

These biscuits are best the day they are made, but leftovers reheat well. If your dough feels dry and won’t hold together, add an extra tablespoon of buttermilk until it just comes together.
