- Beat butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
- Beat in egg and vanilla until smooth.
- Whisk flour blend, baking soda, and salt in a separate bowl, then stir into the butter mixture until just combined.
- Fold in chocolate chips, cover, and chill the dough at least 30 minutes.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoonfuls onto parchment-lined sheets and bake 10 to 12 minutes until edges are golden. Cool on the sheet 5 minutes, then transfer to a rack.
Notes
For the best texture, let the dough rest in the fridge overnight. The flour absorbs moisture slowly, which stops any grittiness and gives a richer flavor. Warm the cookies gently in the microwave for that fresh-from-the-oven feel.
