- Preheat oven to 350°F (175°C). Cream butter, cream cheese, granulated sugar, and powdered sugar until fluffy, about 2-3 minutes.
- Beat in egg, vanilla, and almond extract until smooth.
- Whisk flour, cornstarch, baking powder, and salt. Fold into wet mixture just until combined.
- Scoop ¼-cup mounds of dough onto lined baking sheets, 3 inches apart. Bake 10-12 minutes until edges are set. Cool completely.
- Beat frosting ingredients until fluffy and spreadable. Tint pink and frost cookies. Let set 5 minutes.
Notes
For the best texture, use a high-quality cup-for-cup gluten-free flour blend. The cookies will look underdone at 10 minutes, that is perfect. They firm up as they cool. If your frosting is too thick, add milk a few drops at a time.
