Method
- Heat oil in a large pot over medium-high heat. Add onion and ground beef, breaking up the meat, and cook 5-7 minutes until browned. Stir in garlic for the last minute.
- Reduce heat to medium, add tomato paste, and stir 30 seconds. Sprinkle in chili powder, cumin, and smoked paprika. Cook 1 minute, stirring constantly.
- Add diced tomatoes with their juices, drained beans, beef broth, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
- Remove from heat, taste for seasoning, and ladle into bowls. Top with sour cream, cheese, or any toppings you like.
Notes
The chili tastes even better after a short rest, if you can let it sit off the heat for 10 minutes. That time is not included in the cook time above but it helps the flavors settle. For a thicker chili, simmer an extra 5 minutes.
