- Slice the chicken breasts horizontally into 4 cutlets, pound to 1/2 inch thickness, and season with salt and pepper.
- Beat the eggs in a shallow bowl. In another, mix the almond flour, Parmesan, garlic powder, salt, and pepper. Dip each cutlet in egg, then press firmly into the almond flour mixture. Let rest on a rack for 5 minutes.
- Heat the oil in a skillet over medium heat. Cook the cutlets for 3 to 4 minutes per side until golden and 165°F inside. Drain briefly on paper towels, then place on a baking sheet.
- Preheat the broiler. Spoon marinara over each cutlet and top with mozzarella. Broil 6 inches from the heat for 2 to 3 minutes until bubbly and spotty brown.
- Scatter fresh basil on top and serve immediately.
Notes
Letting the dredged chicken sit on a rack for 5 minutes before frying makes the crust much more likely to stay put. Double check that your marinara is labeled gluten free, because some brands add wheat.
