Gluten Free Chicken Parmesan Recipe

Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 lb total)
  • 2 large eggs
  • 1 cup super-fine almond flour
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or avocado oil
  • 1 cup marinara sauce
  • 1 cup shredded low-moisture mozzarella
  • Fresh basil leaves, for garnish

Method
 

  1. Slice the chicken breasts horizontally into 4 cutlets, pound to 1/2 inch thickness, and season with salt and pepper.
  2. Beat the eggs in a shallow bowl. In another, mix the almond flour, Parmesan, garlic powder, salt, and pepper. Dip each cutlet in egg, then press firmly into the almond flour mixture. Let rest on a rack for 5 minutes.
  3. Heat the oil in a skillet over medium heat. Cook the cutlets for 3 to 4 minutes per side until golden and 165°F inside. Drain briefly on paper towels, then place on a baking sheet.
  4. Preheat the broiler. Spoon marinara over each cutlet and top with mozzarella. Broil 6 inches from the heat for 2 to 3 minutes until bubbly and spotty brown.
  5. Scatter fresh basil on top and serve immediately.

Notes

Letting the dredged chicken sit on a rack for 5 minutes before frying makes the crust much more likely to stay put. Double check that your marinara is labeled gluten free, because some brands add wheat.
