- Heat the oil in a large skillet over medium-high heat. Pat the chicken dry. Mix the cornstarch, garlic powder, paprika, salt, and pepper on a plate. Dredge the breasts in the mixture, pressing to coat both sides.
- Place the chicken in the hot skillet and cook for 5 to 6 minutes until the underside is deep golden. Flip and cook another 4 to 5 minutes, until the thickest part reaches 165°F (74°C).
- Rest the chicken on a cutting board for 5 minutes. Slice diagonally and serve warm.
Notes
Letting the chicken rest before slicing is the trick to keeping it juicy. If you're cooking more than two breasts, work in batches so the pan stays hot and the coating stays crisp.
