Gluten Free Buttermilk Biscuits Recipe

Ingredients
  

  • 2 cups gluten free 1-to-1 baking flour (must contain xanthan gum)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon fine sea salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 3/4 cup plus 2 tablespoons cold buttermilk
  • 1 tablespoon heavy cream or melted butter, for brushing

Method
 

  1. Preheat oven to 425°F (220°C). Whisk flour, baking powder, baking soda, sugar, and salt in a large bowl. Cut in butter until coarse meal with pea-sized bits remains.
  2. Pour in buttermilk; stir with a fork just until a shaggy dough forms.
  3. Turn dough onto a floured surface. Press to a 3/4-inch square, fold in thirds like a letter, press again. Repeat fold and press two more times.
  4. Pat dough to 1-inch thickness. Cut with a sharp 2 1/2-inch biscuit cutter without twisting. Place on a parchment-lined baking sheet.
  5. Brush tops with cream or butter. Bake 13 to 15 minutes, until deep golden and puffed.

Notes

Cold is key: chill your butter and buttermilk until you need them. If the dough warms up and feels sticky during folding, pop it in the fridge for 5 minutes. Biscuits are best fresh, but unbaked cut biscuits freeze beautifully for later.
