- Beat the butter and sugar with a hand mixer until pale and fluffy, about 2 minutes.
- Add the egg yolk and vanilla and beat on low until combined.
- Mix in the gluten-free flour and salt on low until a crumbly dough forms that holds together when pressed.
- Divide the dough in half, shape into 2-inch-thick logs, wrap in plastic, and chill until firm, at least 30 minutes.
- Preheat the oven to 350°F (175°C). Slice logs into 1/3-inch rounds, place on parchment-lined sheets, and bake 10 to 12 minutes until edges are set and golden at the base. Cool on the sheet 2 minutes, then transfer to a rack. Dust with powdered sugar before serving if desired.
Notes
The dough must be chilled at least 30 minutes (not counted in the prep time) so the cookies hold their shape in the oven. If your kitchen is warm, chill the sliced rounds on the baking sheet for 10 minutes before baking for the cleanest edges.
