- Melt butter in a large pot over medium heat, add onion, and cook 4-5 minutes until soft. Stir in garlic and cook 30 seconds.
- Add potato, broccoli, broth, salt, and pepper. Bring to a boil, then simmer for 12-15 minutes until vegetables are very tender.
- Remove from heat and blend the soup until completely smooth using an immersion blender or standard blender in batches.
- Return pot to low heat. Stir in cream, then add cheddar a handful at a time, whisking until melted. Add Parmesan and heat gently for 2-3 minutes, never letting it boil.
- Ladle into bowls, drizzle with extra cream if you like, and crack black pepper over the top.
Notes
If you prefer a thicker soup, let it sit off the heat for 5 minutes after blending; it will continue to thicken slightly as it cools. Freshly grated cheese makes a real difference here, so skip the pre-shredded bag if you can.
